Materials
- Measuring cup
- Cheesecloth
- Food-grade twine
- Strainer/colander
- Large saucepan
- Mixing bowl
- Large metal spoon
- Sauce pot/boiling pot
- Heat-resistant glass nesting bowl
- Cheese bowl with lid
Ingredients
- 1 quart of whole milk
- 1 cup of buttermilk
- 45 milligrams of your favorite CBD oil (adjust as desired)
- 3 tablespoons of lemon juice or the juice of one small lemon
- Sea salt
Instructions
- To start, create a double boiler by using your saucepan and a glass bowl. With the sauce pot roughly halfway full, bring the water to a boil before placing your glass bowl on top. The double boiler is important for helping the fats and proteins in the milk fuse with CBD oil without scalding or burning.
- Combine your CBD oil and whole milk to allow them to infuse over heat for 90 minutes. Check on the mix occasionally and stir when you notice a film forming on top.

- After 90 minutes, strain the milk-CBD mixture using cheesecloth. As you strain, be sure to squeeze the cloth to get out all milk residue.
- The remaining two cups of milk, which were not infused with CBD, can now be combined with your CBD-infused milk in a saucepan placed on medium heat. Allow the combined contents to reach a simmer (170°F to 175°F for most stoves).
- Next, add 1/2 cup of buttermilk to the mixture. It’s important not to substitute any other kind of milk for buttermilk because the buttermilk’s role here is to add fat and acidity that will bind to your CBD.
- Next, add the lemon juice to help ensure that your buttermilk triggers the curdling process. During curdling, milk separates into curds and whey. This should happen within 15 minutes of adding the lemon juice. You’ll know that it’s successful when you begin to see thick, cloud-like curds on top of your liquid whey.

- To separate your curds from your whey, lay cheesecloth down over a strainer that will hold your curds.

- When transferring curds to the strainer, do your best to avoid smashing or flattening them. Scoop up as much of the “fattiness” as possible.
- Next, tie your cheesecloth together using your twine. The cheesecloth should be left to hang over a mixing bowl for up to an hour to allow for all excess liquids to drain.
- You can then open your cheesecloth to gently salt your freshly made cheese. Optionally, you can add cranberries, berry purée, rosemary, and herbs, as well as chopped nuts or any other extras that will add color or flavor to this spreadable cheese.

Storage Suggestions
Due to the freshness of this CBD cheese, we recommend eating it within a few days of making it. However, it’s actually best enjoyed after it’s allowed to sit for a day before serving. Make the cheese at least 10 to 24 hours in advance of serving to allow it to sit, covered in the fridge, in a cheese bowl for at least eight hours. In addition to building the flavor, this technique also makes the cheese neater and easier to serve.
